Just before harvesting the first-picked new leaves, the tea stalks were covered with cheesecloth for over 10 days to protect them from the light. By blocking the light, the new leaves turn a deep green, the amino acids (flavorful compounds) increase, and the catechins (astringent compounds) decrease, resulting in the flavor and color of kabusecha that is unique to kabusecha. The result is something between gyokuro and sencha, characterized by a gyokuro-like covered aroma.
